Ingredients
- 3/4-1lb Catfish
- 1 egg
- 1Tbs water
- 3Tbs coconut flour
- 1/3cup almond/walnut meal (or add'l coconut flour)
- 2tsp salt
- 1 tsp red pepper flakes
- 1tsp cayenne pepper
- 1/2tsp paprika
- 1tps marjoram
- 2Tbs oil (coconut/EVOO)
Instructions
- In a medium bowl blend dry ingredients together
- In small bowl beat egg and water
- Heat frying pan on med/high heat, melting oil
- Coat fish with egg mixture then dredge with dry mix
- Turn heat to medium/low
- Fry fish on both sides (about 8-10min each side) using thongs to turn
Notes: Too high a heat will burn the breading (especially if you substitute coconut flour only breading for the nut meal). Coconut breading will also be a much drier texture than the meal.
