The other white meat burgers

Ingredients:
  • 1lb ground pork or turkey
  • 1 lemon (squeezed)
  • 1Tbs mustard
  • 2tsp dill
  • 1tsp red pepper
  • 1tsp parsley
  • 1tsp paprika
  • 1tsp salt
  • 1Tbs oil
Directions:  Heat greased frying pan to Med-high heat. Form 3-4 patties. Cook about 5 min on each side.

Paleo Oatmeal

Ingredients:
  • 1/3c Almond meal
  • 1 egg
  • 2Tbs water (Moo: milk, or cream)
  • 1tsp cinnamon
  • 1/2 banana slices
  • 1/3c Blue berries
Directions:
Mix meal, egg, liquid, cinnamon together in a cereal bowl.  Microwave for 30s.  Stir in banana and berries, heat for 60s.

Additional add-ins: nutbutter, any fruit, honey, maple syrup, cocoa, etc.

Paleo Lasanga

Ingredients
  • 2 lbs Ground beef/ loose sausage
  • 1 large pepper, bite size
  • 2 medium onions, sliced
  • 2 medium Zucchini sliced thin
  • 24 oz Red Sauce (See Notes, check ingredients for "paleoness")
  • 2 cloves garlic, minced
  • 1tsp oregano
  • salt/pepper to taste
  • red pepper flakes (optional)
  • 8oz mozzarella (optional, Moo Paleo)
Directions
  1. Preheat oven to 350F
  2. Saute meat, season with salt, pepper, 1 clove garlic, cook thouroughly.  Drain. Saute onion and pepper
  3. Saute onion, garlic, and pepper, 3 min. Combine with meat
  4. Season sauce with oregano, salt, pepper, remainder of garlic
  5. Layer meat/veggie mix, sauce, and zucchini, (and cheese),
  6. Bake for 30min.
Serves: 4-6

Notes: We found a super clean red sauce, POMI, at Key Food in Astoria.  Because this sauce has minimal ingredients you will have to add more salt and garlic to remove the acidic taste.  Also, Classico offers particular jars that are paleo friendly.  The Garlic Classico is a good choice.

Fried Catfish

Ingredients
  • 3/4-1lb Catfish
  • 1 egg
  • 1Tbs water
  • 3Tbs coconut flour
  • 1/3cup almond/walnut meal (or add'l coconut flour)
  • 2tsp salt
  • 1 tsp red pepper flakes
  • 1tsp cayenne pepper
  • 1/2tsp paprika
  • 1tps marjoram
  • 2Tbs oil (coconut/EVOO)
Instructions
  1. In a medium bowl blend dry ingredients together
  2. In small bowl beat egg and water
  3. Heat frying pan on med/high heat, melting oil
  4. Coat fish with egg mixture then dredge with dry mix
  5. Turn heat to medium/low
  6. Fry fish on both sides (about 8-10min each side) using thongs to turn
Notes: Too high a heat will burn the breading (especially if you substitute coconut flour only breading for the nut meal).  Coconut breading will also be a much drier texture than the meal.
